“No-Bars”

These No-Bake Bars are affectionately referred to as “No-Bars” since Haley was just two years old at the time we came up with this recipe.  It’s what she called them and “No” was probably her favorite word at the time.  It’s a fun way to eat Cheerios for sure and definitely my favorite way to have them.  They remind me a bit of PBC’s (Peanut Butter Crunchies for anyone not familiar with that dessert) but different cereal and they have M&M’s instead of a chocolate top.

Rick has actually been the one wanting these and we thought it might be something the kids would all enjoy as we were planning on sharing Family Night with another family.  The problem is, it’s wintertime still and we’re having a rough time getting 11 kids between the two of us healthy all at the same time.  Hopefully the third time will be a charm, but we had these anyway on Monday night… just without sharing them.Sad smile  So anyway, here is my favorite way to eat a Cheerio.

Butter a 10 x 15 casserole dish. 

In large bowl mix 4 c. Cheerios, 2 c. rice cereal, 2 c. peanuts, 2 c. M&M.  (I skip the peanuts and put in 3 c. rice cereal and 2 or 3 c. M&Ms.  That way my little ones can still have this without them being a choking hazard).  Set aside.

In a saucepan, bring 1 c. corn syrup and 1 c. sugar to a boil, stirring frequently.  Remove from heat and add 1 1/2 c. creamy peanut butter and 1 tsp. vanilla.  Stir well.  Pour over cereal mixture and toss to coat evenly.  Spread into greased casserole dish and Cool for a few hours.  (From Quick Cooking’s Collector’s Edition – 1999)
