Strawberries went on sale this week for .90 cents per pound at the grocery store. Already having looked into U-pick farms only to discover they have nothing this year after three years of draught, I was at the supermarket Friday on payday to purchase 22 lbs. of fresh strawberries. Saturday we opened the windows and I spent the day hulling and cutting strawberries in the steamy kitchen till my fingers and thumbs were berry stained.
17 pounds of berries made 29 pints of jam in total and only one didn’t seal… that’s how we know which jar to use first! We made so much jam that Rick had to run to the store to buy another box of jars… something we haven’t had to do since we could get jars for around $3 a box but then again, our family is larger now and eats more jam. With pectin purchased at 50% off, sugar purchased in bulk and scant amounts of lemon juice and butter (to keep foaming down) also purchased in bulk, each pint was made for under $1.00… it was fun to make and I know what’s in it. That’s a good deal
The other five pounds of the berries were happily eaten and a few of them were frozen for later use in smoothies and ice cream.
Homemade strawberry jam… it’s the BEST! At least until raspberry picking time
